Dinners by Christine this week

Christine cooking...

Delicious dinner tonight!

In hope to teach our children to learn about grocery budgeting, I assigned each of the two a week of dinners of their choice - provided that they stay within the dollar amount I gave them. If they have done a good job with a little money left over, they can buy a treat - of course, at their choices.

Christine did very well this week, she even cooked three meals - her favorite Balsamic Roasted Pork Tenderloins, Mrs. Iosue's Enchilada Casserole and Pizza (tomorrow). All from her cooking class. The Tenderloin is getting better each time she makes it. She will make it again in another week when it is her week with the food budgeting. The Enchilada was delicious, a couple more times of making it, I am sure it will taste like the one you would order from the restaurant. We will see how the pizza turns out tomorrow, I have a feeling that it would become yet another one of her favorite recipes. The best part is, Christine cleaned as she cooked, leaving very little clean-ups for me to do after dinner! Now that's a great helper!

Oh yes, there's $2.00 left over from this week, so Christine chose to buy a box of Popsicles from T.J. - she is eager to taste a bit of summer!
